We just moved into a house that has three Hampton Bay Ceiling fans. They are all similar style. Two of them do not let you turn off the lights from the remote. I can adjust the dimmer by pressing an holding the top button (light/dimmer) but if I just tap the button, it goes to a dim state. I would like to be able to keep the fan running with the lights out (the third fan lets me do this). I have tried changing batteries and bulbs.

I've never heard of this before. It's either a faulty remote or faulty receiver. Try setting the working remote to match the other fans/remotes and see if it works, if it does, you need new remotes. If not you need new receivers.
